Carrageenan

Introduction Carrageenan is one of the polysaccharides that extracted from seaweeds. It is widely used in food industry for its gelling, thickening and stabilizing properties. Sometimes it is used alone but more frequently in combination with other gum. It has strong influence on the textural characteristics of food and diverse applications.
